Cocktails with… Four Pillars Gin – from Australia

Today’s review is the first in a series on Australian distilled gin, which have been made possible thanks to the generosity of my friend, James, a distiller from down-under who brought me a tasting selection on a recent trip to London.

The first gin in the series will be Four Pillars from Yarra Valley near Melbourne. The gin is made using a mix of local (Tasmanian Pepperberry and Lemon Myrtle) and classic botanicals (juniper, coriander, angelica, cardamom, cinnamon, star anise, and lavender). Whole organic oranges (both peel and flesh) that are sourced from Australia are also used.

FOURPILLARSGIN

The gin is bottled at 41.8% ABV and is proofed using water from the Yarra Valley.

On its own
Nose: Some malty vanilla and fennel, combined with a little eucalyptus and coriander.
Taste: Chocolate upfront, as well as some leafy floral notes that complement the coriander, anise, and fennel. Quite pungent, this is full of both warm spice and sunny, floral flavours, as well as a little heat towards the end.

Gin & Tonic
A lovely Gin & Tonic – there is a great mix of classic flavours and more contemporary, spiced notes such as cardamom.

Martini
Quite piney, with a little sappy sweetness, prominent juniper throughout, and some herbal notes. As clean and cutting as a fresh, green pine needle.

Negroni
A very smooth Negroni with plenty of herbs and spices; in particular, some hints of fresh mint. A lighter herbal bitterness follows. This is quite an accessible drink – good for Negroni newbies.

In Conclusion
Four Pillars Gin is a bold and fragrant gin and represents a playful variation on the classic style of gin. My favourite drink was the accessible and tasty Negroni.

Four Pillars Aged Gin

On its own

Nose: Creamy Madagascan vanilla and vibrant citrus.
Taste: Initially, there are floral notes and hints of jammy citrus, like lime marmalade. There are some dry wood notes in the middle, and hints of menthol pepper and warm spice on the finish, which lingers for several minutes

Gin & Tonic
Woody, with some gingerbread spice, oak, and vanilla. Pretty smooth, with some of the dry and citrus character coming through.

Martini
Exceptionally complex, as Martinis go. This has the fresh crispness of a traditional Martini alongside the complexity of a neat single malt scotch. It reminds me of walking in a pine forest after rainfall: there’s some citrus, coriander, and bright fennel notes. Intense and splendid!

Negroni
Fantastic – a great illustration of how well aged gin can work in a Negroni. This has a complex array of botanical flavours: zesty citrus; rich, woody spice; and a combination of dry juniper and angelica that complements the bitterness of the Campari nicely.

Four Pillars Gunpowder

On its own
Nose: Fresh citrus and coriander, as well as leafy, slightly vegetal green notes.
Taste: Spicy citrus upfront with notes of coriander, cassia, ginger, and nutmeg. Then come some green, leafy notes, before dry pine note towards the finish. This has quite an oily texture, but is surprisingly smooth for 57.0% ABV.

Gin & Tonic
Bold and spicy, with notes of ginger, cinnamon, and cardamom. This has a wonderful, vibrant complexity to it, with notable hints of lightly sweet, sappy cedar.

Martini
Pine and citrus on the nose, plus jammy citrus and plenty of woody, slightly sweet spice and a hint of marmalade, before a dry finish of angelica and juniper.

Negroni
A rather luscious Negroni with jammy, zesty notes of citrus. This is really rather fruity for a Negroni, but that doesn’t mean that it’s particularly sweet and it keeps the cocktail’s trademark earthy bitterness, along with a touch of the gin’s dryness and spice.
